Healthy Gluten-Free Recipe - Savoury Rainbow Slice

Here is one of our gluten-free recipes that prove healthy doesn’t need to be boring!
Packed with veggies, this 𝐒𝐚𝐯𝐨𝐮𝐫𝐲 𝐑𝐚𝐢𝐧𝐛𝐨𝐰 𝐒𝐥𝐢𝐜𝐞 recipe ticks all the nutrient boxes and tastes delicious.
Time: 40 minutes
Serves: 8
All the ingredients you’ll need:
- 2 tbs of olive oil
- 2 rashers of bacon (diced)
- 1 red onion (finely chopped)
- 2 cloves of garlic (minced)
- 3 carrots (peeled and grated)
- 1 large zucchini (grated)
- 1 red capsicum (diced)
- 4 free-ranged eggs (lightly whisked)
- 60ml of milk of choice (almond for DF)
- 1 cup of gluten free flour (or flour of choice)
- ¾ cup of tasty cheese (grated) (vegan cheese for DF)
- Light sprinkle of sea salt and black pepper
Here’s how you create this scrumptious slice:
- Preheat oven to 170 degrees (fan forced)
- Line slice tin with baking paper
- Add olive oil to a frypan and add the bacon, onion and garlic over medium heat until the onion softens
- Prepare the vegetables and add them to a large bowl with the eggs, milk, flour, salt, pepper and half a cup of cheese
- Add the cooked bacon, onion and garlic into the mix, and combine well
- Pour the mixture into the tin, and add the remaining grated cheese on top
- Cook the slice for 30 minutes, ensuring middle is set
