Healthy Gluten-Free Recipe - Savoury Rainbow Slice

Here is one of our gluten-free recipes that prove healthy doesn’t need to be boring!⁠

Packed with veggies, this 𝐒𝐚𝐯𝐨𝐮𝐫𝐲 𝐑𝐚𝐢𝐧𝐛𝐨𝐰 𝐒𝐥𝐢𝐜𝐞 recipe ticks all the nutrient boxes and tastes delicious.⁠

Time: 40 minutes⁠

Serves: 8⁠

All the ingredients you’ll need:⁠

  • 2 tbs of olive oil⁠
  • 2 rashers of bacon (diced)⁠
  • 1 red onion (finely chopped)⁠
  • 2 cloves of garlic (minced)⁠
  • 3 carrots (peeled and grated)⁠
  • 1 large zucchini (grated)⁠
  • 1 red capsicum (diced)⁠
  • 4 free-ranged eggs (lightly whisked)⁠
  • 60ml of milk of choice⁠ (almond for DF)⁠
  • 1 cup of gluten free flour (or flour of choice)⁠
  • ¾ cup of tasty cheese (grated)⁠ (vegan cheese for DF)⁠
  • Light sprinkle of sea salt and black pepper⁠

Here’s how you create this scrumptious slice:⁠

  1. Preheat oven to 170 degrees (fan forced)⁠
  2. Line slice tin with baking paper⁠
  3. Add olive oil to a frypan and add the bacon, onion and garlic over medium heat until the onion softens⁠
  4. Prepare the vegetables and add them to a large bowl with the eggs, milk, flour, salt, pepper and half a cup of cheese⁠
  5. Add the cooked bacon, onion and garlic into the mix, and combine well⁠
  6. Pour the mixture into the tin, and add the remaining grated cheese on top ⁠
  7. Cook the slice for 30 minutes, ensuring middle is set⁠
