Slow- Cooker Satay Chicken Recipe

A perfect dish to come home to on a cold winters day. This one has been a favourite of ours for a very long time. So versatile, family friendly, delicious and just so good. What more can we say?
Slow-Cooker Satay Chicken
INGREDIENTS
- 500g chicken thigh
- 1 tbsp oil
- 1/2 cup baby spinach leaves
- 200g pumpkin, diced
- 1 bunch of broccolini, 3cm pieces
- 1 carrot, thickly sliced
- 1 zucchini, thickly sliced
SAUCE
- 1 tbs oil
- 2 clove of garlic, crushed
- 3cm piece of ginger, minced
- 1 tsp of Sambal Olek (or 1 red chilli) *Optional
- 1/3 cup of natural peanut butter
- 2/3 cup coconut cream
- 2 tbsp tamari (or soy sauce)
- Juice of half a lime
- 1/2 tbsp of coconut sugar
- 2/3 cup chicken stock (or water for vegan)
METHOD
- Heat the oil in a large heavy based pan. Add the chicken and brown for approximately 5 minutes. Transfer to slow cooker.
- Using the same heavy-based pan, cook the garlic, ginger, onion and chilli if using. Cook until fragrant.
- Transfer onion mixture to slow cooker. Add the rest of the sauce ingredients, plus the vegetables (not spinach) and chicken. Cover and cook on low for 4 hours.
- Before serving, add stir through spinach.
- Serve with rice, Greek yoghurt, coriander, roasted peanuts and fried shallots.
