Slow- Cooker Satay Chicken Recipe

A perfect dish to come home to on a cold winters day. This one has been a favourite of ours for a very long time. So versatile, family friendly, delicious and just so good. What more can we say? ⁠

Slow-Cooker Satay Chicken 

INGREDIENTS⁠

    • 500g chicken thigh
    • 1 tbsp oil 
    • 1/2 cup baby spinach leaves⁠
    • 200g pumpkin, diced⁠
    • 1 bunch of broccolini, 3cm pieces⁠
    • 1 carrot, thickly sliced
    • 1 zucchini, thickly sliced

SAUCE⁠

  • 1 tbs oil⁠
  • 2 clove of garlic, crushed⁠
  • 3cm piece of ginger, minced⁠
  • 1 tsp of Sambal Olek (or 1 red chilli)⁠ *Optional
  • 1/3 cup of natural peanut butter⁠
  • 2/3 cup coconut cream⁠
  • 2 tbsp tamari (or soy sauce)⁠
  • Juice of half a lime⁠
  • 1/2 tbsp of coconut sugar⁠
  • 2/3 cup chicken stock (or water for vegan)⁠

METHOD⁠

  1. Heat the oil in a large heavy based pan. Add the chicken and brown for approximately 5 minutes. Transfer to slow cooker.
  2. Using the same heavy-based pan, cook the garlic, ginger, onion and chilli if using. Cook until fragrant. 
  3. Transfer onion mixture to slow cooker. Add the rest of the sauce ingredients, plus the vegetables (not spinach) and chicken. Cover and cook on low for 4 hours. 
  4. Before serving, add stir through spinach.
  5. Serve with rice, Greek yoghurt, coriander, roasted peanuts and fried shallots.
